Save A bold, zesty appetizer featuring crisp dill pickles, spicy Cajun seasoning, and gooey cheese, all wrapped in golden pizza dough. Perfect for parties or snacking with a Southern twist.
I created these Cajun Pickle Pizza Sticks for a family game night, and everyone was instantly hooked on the crispy texture and tangy pickles.
Ingredients
- Refrigerated pizza dough: 1 can (about 400 g), plus all-purpose flour for dusting
- Dill pickle spears: 8 large, patted dry
- Shredded mozzarella cheese: 120 g (about 1 cup)
- Shredded cheddar cheese: 60 g (about ½ cup)
- Cajun seasoning: 2 tbsp (store-bought or homemade)
- Garlic powder: ½ tsp
- Butter: 2 tbsp melted
- Fresh parsley: 1 tbsp chopped (optional)
- Ranch dressing: 120 ml (½ cup), for serving
Instructions
- Prep Oven & Sheet:
- Preheat your oven to 220°C (425°F). Line a baking sheet with parchment paper.
- Roll Out Dough:
- Lightly dust a work surface with flour. Roll out the pizza dough into a rectangle (about 30 x 25 cm).
- Portion Dough:
- Cut the dough into 8 equal strips.
- Dry Pickles:
- Pat the pickle spears dry with paper towels to prevent sogginess.
- Add Cheese & Seasoning:
- Sprinkle a mix of mozzarella and cheddar along each dough strip.
- Assemble:
- Place a pickle spear at one end of each strip, then sprinkle generously with Cajun seasoning and a touch of garlic powder.
- Wrap & Seal:
- Roll the dough tightly around each pickle spear, pinching the seams to seal.
- Bake:
- Arrange the wrapped pickles seam-side down on the prepared baking sheet. Brush each stick with melted butter and sprinkle with any remaining cheese and a little extra Cajun seasoning. Bake for 12–15 minutes, or until golden brown and crisp.
- Finish & Serve:
- Garnish with chopped parsley, if desired. Serve warm with ranch dressing for dipping.
Save My kids love helping wrap the pickles in dough, and the cheesy, spicy sticks disappear within minutes of coming out of the oven.

Recipe Guide

Large dill pickle spears offer the ideal crunch and bold flavor. Dry them before wrapping to avoid sogginess.
- → Can I use homemade Cajun seasoning?
Yes, homemade Cajun seasoning lets you adjust spice and flavor to your liking.
- → Are there dairy-free alternatives for cheese and butter?
Vegan cheese and dairy-free butter work well for a plant-based option without sacrificing flavor or texture.
- → What dipping sauces pair well?
Ranch dressing complements the spicy profile, while marinara offers a tangy alternative for dipping.
- → How do I keep the dough from splitting during baking?
Roll the dough tightly around each pickle and pinch the seams well to seal. Avoid overstuffing with cheese.
- → Can I increase heat?
Add cayenne to the seasoning or try spicy pickles if you prefer more heat in the finished sticks.
