sparkling cherry soda scones (Printable)

# What you'll need:

01 - 2 cups all-purpose flour

05 - 1/2 cup cold sparkling cherry soda
06 - 1/2 cup heavy cream, plus extra for brushing
07 - 1/2 teaspoon vanilla extract

08 - 3/4 cup dried tart cherries or chopped fresh/frozen cherries, well-drained
09 - 1/4 cup unsalted butter, cold and cubed

10 - 2 tablespoons coarse sugar

# Method:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
03 - Add cold cubed butter. Using a pastry blender or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.
04 - Stir the dried tart cherries, or well-drained fresh/frozen cherries, into the flour mixture.
05 - In a separate bowl, combine sparkling cherry soda, heavy cream, and vanilla extract.
06 - Pour the wet ingredients into the dry mixture and stir gently until just combined. Do not overmix.
07 - Turn the dough out onto a floured surface and gently pat into a 1-inch thick round.
08 - Divide the round into 8 wedges and arrange them on the prepared baking sheet.
09 - Brush the tops of the scones with extra cream and sprinkle with coarse sugar, if desired.
10 - Bake for 16–18 minutes until golden and set. Transfer to a wire rack to cool before serving.
