Roasted Sweet Potato Black Bean (Printable)

# Method:

01 - Preheat the oven to 400°F and line a baking sheet with parchment paper.
02 - In a large bowl, toss sweet potato cubes, red onion, and red bell pepper with olive oil, cumin, smoked paprika, cinnamon, coriander, cayenne (if using), salt, and pepper.
03 - Arrange the vegetables in a single layer on the baking sheet and roast for 25 to 30 minutes until tender and lightly caramelized, stirring halfway through.
04 - Heat the drained black beans in a small saucepan over medium heat until warmed through.
05 - Warm tortillas in a dry skillet or microwave until pliable.
06 - Spread a thin layer of cranberry sauce (if using) on each tortilla. Top with roasted vegetables, black beans, spinach, avocado slices, and cilantro.
07 - Roll the tortillas tightly, tucking in the sides to form wraps.
08 - Slice wraps in half and serve with fresh lime wedges.
