# What you'll need:

# Method:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper. Place cauliflower florets in food processor and pulse until finely riced.
02 - Transfer riced cauliflower to microwave-safe bowl and microwave for 5 minutes. Allow to cool slightly, then place in clean kitchen towel and squeeze out excess moisture thoroughly.
03 - In large bowl, combine drained cauliflower, eggs, mozzarella, Parmesan, garlic powder, oregano, salt, and pepper. Mix until well combined.
04 - Divide mixture into 8 equal portions. Shape each into 1/2-inch thick rectangle on prepared baking sheet to form 8 bread slices.
05 - Bake for 18-20 minutes until golden and firm. Remove from oven and cool for 5 minutes.
06 - Heat large nonstick skillet over medium heat. Butter one side of each cooled cauliflower bread slice.
07 - Place 4 bread slices, buttered side down, on skillet. Top each with 1/4 of cheddar and mozzarella cheese mixture. Cover with remaining bread slices, buttered side up.
