01 - 425 g canned chickpeas, drained and rinsed
02 - 60 g plain yogurt
03 - 30 g mayonnaise
04 - 10 g Dijon mustard
05 - 30 g chopped fresh parsley
06 - 30 g diced red onion
07 - 15 g chopped fresh dill
08 - 10 g capers, drained and chopped
09 - 5 g fresh lemon juice
10 - 1 g freshly ground black pepper
11 - 1 g kosher salt
→ Assembly
12 - 6 large flour tortillas
13 - 15 g everything bagel seasoning
# Method:
01 - In a large bowl, use a fork or potato masher to coarsely mash the chickpeas until most are broken and some texture remains.
02 - Add yogurt, mayonnaise, mustard, parsley, red onion, dill, capers, lemon juice, pepper, and salt to the chickpeas and stir until fully combined.
03 - Lay a tortilla flat on a clean surface and evenly spread a portion of chickpea mixture over the tortilla, leaving a 1.5 cm border around the edges.
04 - Sprinkle everything bagel seasoning over the filling. Roll the tortilla tightly into a log shape.
05 - Slice each rolled tortilla crosswise into 2.5 cm thick pinwheels and arrange on a platter for serving.
