Candied Orange Yogurt Parfait (Printable)

# What you'll need:

# Method:

01 - In a medium saucepan, combine 1 cup granulated sugar and 1 cup water. Bring to a simmer over medium heat, stirring until sugar dissolves completely.
02 - Add orange slices in a single layer to the syrup. Simmer gently for 12 to 15 minutes, turning occasionally, until rinds become translucent.
03 - Carefully transfer candied orange slices to a parchment-lined tray using a slotted spoon. Allow to cool completely, approximately 10 minutes.
04 - In a mixing bowl, combine 2 cups Greek yogurt with 2 tablespoons honey or maple syrup if desired, and 1 teaspoon vanilla extract. Stir until smooth and well incorporated.
05 - Spoon a layer of yogurt mixture into the bottom of each parfait glass or jar. Add a layer of granola and several pieces of candied orange. Repeat layering until glass is nearly full, finishing with yogurt on top.
06 - Arrange candied orange slices on top of each parfait. Sprinkle with additional granola and toasted almonds. Garnish with fresh mint leaves if desired. Serve immediately for optimal crunch or chill up to 1 hour before serving.
