# What you'll need:
→ Pimento Cheese
01 - 1 1/2 cups sharp cheddar cheese, grated
02 - 1/2 cup cream cheese, softened
03 - 1/4 cup mayonnaise
04 - 1/3 cup jarred pimentos, drained and finely chopped
05 - 1/2 teaspoon garlic powder
06 - 1/4 teaspoon smoked paprika
07 - 1/4 teaspoon cayenne pepper (optional)
08 - Salt and black pepper, to taste
→ Sandwich Assembly
09 - 8 slices sturdy white or country bread
10 - 3 to 4 tablespoons unsalted butter, softened
# Method:
01 - In a medium bowl, thoroughly blend sharp cheddar, cream cheese, mayonnaise, pimentos, garlic powder, smoked paprika, cayenne pepper if desired, and seasoning until smooth and homogeneous.
02 - Lay out all bread slices on a clean surface. Spread a generous layer of pimento cheese on 4 slices, then top each with a remaining slice to create closed sandwiches.
03 - Using a spatula or knife, evenly coat the exterior surfaces of each sandwich with softened unsalted butter.
04 - Warm a large skillet or griddle over medium heat until hot.
05 - Place each sandwich on the skillet and cook for 3 to 4 minutes per side, pressing gently as needed, until the bread is golden and crisp and the filling is thoroughly melted.
06 - Remove sandwiches from the skillet, let rest briefly, slice with a bread knife, and serve immediately while warm.
