Creamy oats layered with fresh strawberries and crunchy candied walnuts for a wholesome start.

# What you'll need:

→ Oat Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup unsweetened almond milk
03 - 1/2 cup plain Greek yogurt
04 - 2 tablespoons chia seeds
05 - 1 tablespoon pure maple syrup
06 - 1/2 teaspoon vanilla extract
07 - Pinch of sea salt

→ Strawberries

08 - 1 cup fresh strawberries, hulled and sliced

→ Candied Walnuts

09 - 1/2 cup walnut halves
10 - 1 tablespoon pure maple syrup
11 - 1/2 teaspoon coconut oil
12 - Pinch of ground cinnamon
13 - Small pinch of sea salt

# Method:

01 - In a medium bowl or mason jar, combine rolled oats, almond milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and salt. Stir thoroughly until well combined, cover with a lid or plastic wrap, and refrigerate overnight for at least 6 hours.
02 - Heat a small skillet over medium heat. Add walnut halves, maple syrup, coconut oil, cinnamon, and salt. Stir constantly for 3 to 4 minutes until walnuts are evenly coated and fragrant. Transfer to parchment paper and allow to cool completely until hardened.
03 - In the morning, stir the chilled oat mixture to combine any separated layers. Layer the oat mixture, fresh sliced strawberries, and candied walnuts into serving jars or bowls. Top with additional fresh berries or a light drizzle of maple syrup if desired.
04 - Serve the overnight oats chilled immediately or store in the refrigerator for up to 3 days before consumption.

# Expert Advice:

01 -
  • Everything is done the night before, so you literally just grab and go—no morning scramble required.
  • It tastes indulgent with those candied walnuts and fresh strawberries, but it's actually packed with protein and fiber that keeps you satisfied until lunch.
  • The texture contrast between creamy oats and crunchy candied nuts is honestly addictive once you try it.
02 -
  • The overnight chill time is non-negotiable—at least six hours, ideally eight—because that's when the chia seeds fully activate and the oats transform into something creamy instead of grainy.
  • Don't candy the walnuts the night before or they'll lose their crunch; do them in the morning or the evening before and store them in an airtight container so they stay crispy against the creamy oats.
03 -
  • If your overnight oats are too thick in the morning, thin them with a splash more milk until you hit that perfect spoonable consistency—everyone's preference is different, and it's easy to adjust.
  • The candied walnuts are also incredible sprinkled on salads, yogurt bowls, or eaten straight as a sweet snack, so make extra if you find yourself reaching for them constantly.
