14 - 1 tbsp fish sauce, optional
15 - 1 tbsp lime juice
16 - 1 tsp honey

→ Oil and Garnish

17 - 2 tbsp neutral oil such as canola or sunflower
18 - Fresh cilantro leaves for garnish
19 - 1 tbsp toasted sesame seeds, optional

# Method:

01 - Combine chicken breast with soy sauce, lime juice, turmeric powder, honey, and black pepper in a bowl. Mix thoroughly and allow to marinate for 10 minutes.
02 - Whisk together soy sauce, fish sauce if using, lime juice, and honey in a small bowl. Set aside.
03 - Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add marinated chicken and stir-fry for 3 to 4 minutes until cooked through. Transfer chicken to a plate.
04 - Add remaining oil to the pan. Sauté minced garlic and sliced onion for 1 minute until fragrant. Add bell peppers and snap peas, stir-frying for 2 to 3 minutes until tender-crisp.
05 - Return cooked chicken to the pan along with mango cubes. Pour in prepared sauce and toss all ingredients together. Stir-fry for 2 additional minutes until heated through and evenly coated.
06 - Remove from heat and garnish with fresh cilantro and toasted sesame seeds if desired. Serve immediately with steamed rice or quinoa.

# Expert Advice:

01 -
  • The turmeric gives you that warm, earthy glow while the mango keeps everything bright and not heavy.
  • It comes together in 35 minutes flat, which means weeknight dinner without the stress.
  • Naturally gluten-free and dairy-free, so it works whether you're cooking for yourself or a table full of people with different needs.
02 -
  • Don't skip marinating the chicken; those 10 minutes let the turmeric and lime actually penetrate the meat instead of just sitting on the surface.
  • Medium-high heat is your friend here—too low and everything steams instead of stir-fries, losing that slight char and bite.
  • Add the mango at the very end so it stays tender and doesn't break down into mush.
03 -
  • Slice your chicken against the grain so each piece stays tender instead of becoming stringy.
  • Have everything prepped and within arm's reach before you start cooking; stir-frying moves fast and there's no time to hunt for ingredients mid-way.
