Garlic Butter Mayo Grilled Cheese (Printable)

Crispy sourdough with garlic mayo and sharp cheddar delivers a flavorful, melty, golden sandwich experience.

# What you'll need:

→ Bread

01 - 4 slices sourdough bread

→ Cheese

02 - 4 slices sharp cheddar cheese
03 - 2 slices mozzarella cheese (optional)

→ Garlic Mayo Spread

04 - 3 tablespoons mayonnaise
05 - 1 large garlic clove, finely minced or grated
06 - 1 teaspoon fresh parsley, finely chopped (optional)
07 - 1/4 teaspoon black pepper

→ For Assembly

08 - 1 tablespoon Dijon mustard (optional)

# Method:

01 - Combine mayonnaise, minced garlic, parsley, and black pepper in a small bowl. Mix thoroughly until evenly blended.
02 - Lay out sourdough bread slices. Optionally, spread a thin layer of Dijon mustard on the inside of two slices.
03 - Place 2 slices of cheddar and 1 slice of mozzarella (if using) between two bread slices to form sandwiches.
04 - Evenly coat the outside of each bread slice, top and bottom, with the garlic mayo mixture.
05 - Heat a nonstick skillet or griddle over medium-low heat.
06 - Place sandwiches on the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula, until bread is golden and crisp and cheese is fully melted.
07 - Remove sandwiches from heat and let rest for 1 minute. Slice and serve immediately while hot.

# Expert Advice:

01 -
  • The garlic mayo creates a crispy, almost fried exterior without any greasy heaviness.
  • Sourdough's tang pairs perfectly with sharp cheddar and garlic in a way plain bread never could.
02 -
  • Medium-low heat is your friend here—rushing with high heat will burn the bread before the cheese finishes melting.
  • The garlic mayo must be stirred until completely combined, or you'll get pockets of pure garlic that can overwhelm a bite.
03 -
  • Make your garlic mayo the night before so the flavors meld and deepen—it becomes even better the next day.
  • Press the sandwich gently while cooking to ensure even contact with the pan and uniform browning on both sides.
