13 - 12 soft dinner rolls, slider-size, unsliced

# Method:
01 - Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
02 - Heat olive oil in a skillet over medium heat. Add the diced onion, minced garlic, and red bell pepper. Cook for 3 to 4 minutes until vegetables are softened.
03 - Add ground turkey to the skillet. Cook, breaking it up with a spoon, until no longer pink, about 5 to 6 minutes.
04 - Incorporate Cajun seasoning, smoked paprika, salt, and black pepper. Stir and cook for 2 additional minutes.
05 - Remove skillet from heat. Fold in shredded mozzarella, cheddar, and parsley until the mixture is uniform. Allow to cool slightly.
06 - With a bread knife, cut a deep pocket in each roll without slicing all the way through.
07 - Generously fill each prepared roll with the warm turkey mixture. Arrange stuffed rolls on the lined baking sheet.
